The countdown to the first day of school is ON and I’m super excited. Once again I shall have the silence of my home…ah to dream of the days when I will be able to actually finish a thought without interruption. Don’t get me wrong, I adore my little ladies but come on it gets rough to get things done with them around at times.
The one aspect of Back to School planning which always stumps me is food. What to prepare and pack them which will actually get eaten becomes a challenge. Usually at the beginning of the year I have a strong plan, one which will satisfy my girls but slowly it fades away. Next thing I know I have lunches returning with very little eaten and complaints of them “starving”…sigh.
This year I am determined to keep my chin up and stay on course. I’m finding inspiration everywhere; on Pinterest, on blogs and especially on one of my favourite recipe websites Chicken.ca.

And finally I’m planning on deconstructing this salad and placing the ingredients into Bento boxes for the girls to have fun with it. Omitting the peanuts of course due to school rules. Now this is a cool back to school lunch idea.
