This is a challenge because there are 6 of us here, each with different tastes but I’m no wimp when it comes to a challenge. One ingredient we all seem to agree upon is eggs but when you’re cooking 2 eggs each for 6 people it can become a challenge. This is why I have taken to making my eggs in a muffin tin. I call it my EASY Ham and Egg cups and honestly it’s so simple, you just have to try it!

Crack an egg into the fanned ham in each egg cup. Don’t worry at all if the egg white goes outside of the ham, it’s all good.

Slide the muffin tray into the preheated oven for approximately 20 minutes. Remove the muffin tin and allow to sit for a moment before you scoop them out. Allowing them to sit makes it easy, they won’t stick.
