Prosciutto, Pesto Pizza Recipe Made on the BBQ

My daughters and I are currently staying at our trailer in beautiful Muskoka, Ontario. The girls spend their days in kids programs and this week it was the “Olympics” program. It was seriously cute to see my girls arrive home at lunch exhausted and starving from all of the exercise and fresh air.

We do not have propane for our trailer which means I have to be quite creative, I use the BBQ, an electric skillet and a toaster for most of my meals. This week I’ve been serving the girls a favorite which they love, it’s a Prosciutto, Pesto Pizza made on the BBQ.

Prosciutto, Pesto Pizza

Ingredients

  • 1 pre-cooked chicken breast – chopped finely.
  • handful of cherry tomatoes which you will dice.
  • 4 oz Alfredo sauce
  • 3 oz Pesto
  • 1 cup shredded cilantro
  • 3 cups shredded mozzarella cheese
  • 1 Pizza crust (I used pre-made)
  • 3 oz package of prosciutto

 Sauce Preparation

Combine Alfredo sauce, Pesto, shredded cilantro, diced tomatoes and chicken

Spread the sauce mixture generously over the pizza crust

Cook Pizza on BBQ

P1050568Cover the sauce with shredded mozzarella cheese and place on the BBQ (preheated on Medium heat), close BBQ lid and leave it for approx 20 minutes until cheese is bubbling and bottom of crust is golden brown.

Remove from the grill and cut into desired pieces. Put a rolled prosciutto slice on each serving with a 1/2 of a cherry tomato.

Other delicious toppings to add if you’d like are 1 cup cilantro and 1/2 cup crumbled Feta.

    I love BBQ pizza! Especially one that has chicken on it :) Also, I like that Annie used the term “Oh my lands”, gets me every time!

    Oh yeah! Pizza! This truly is my downfall in the food category. I could eat pizza every day. So many different toppings and ways of eating it. Fact is, I don’t think hubby shares my obsession lol
