Our family has a routine of sitting at the table for dinner together. My husband and I agreed early on there would be no TVs nearby, no electronics and we’d do our best to make this a time in each day where we can all connect. This was much simpler in the toddler days, now that the girls are 6 & 8 they often resent having to come inside from playing to be with their “boring” parents.
Tonight there wasn’t a battle, recently VH had sent us a gift package as part of their #VHExcitement blog tour. Our package was designed for a “Family Fun Night” and the girls were excited that this evening was the one they’d been waiting to enjoy.
As you can see above the package contained some very cute games, colouring books, sticker books and delicious sauces for us to try. There were two recipes for us to choose from and we selected the Korean Pork Lettuce Wraps recipe but modified it slightly by using bread wraps rather than the suggested romaine lettuce as a wrap.
The girls really enjoyed helping my husband and I prepare dinner, this must have something to do with the games they knew would follow!
First we sliced the pork tenderloin length wise into four equal pieces, pierced each one with a fork and made a marinated with the following mixture:
- 1 cup (250 mL) VH® Korean BBQ Sauce
- 2 tbsp (30 mL) VH® Soya Sauce
- 2 tbsp (30 mL) lime juice
We covered the pork with the marinade and popped it into the fridge while we cut up the vegetables and boiled some rice.
The recipes called for romaine lettuce leaves to be used as a wrap but the family was super hungry tonight so we decided to use bread wraps and put lettuce inside along with cucumber and carrots.
The girls loved being involved in the washing, peeling and chopping….this family night was shaping up to be a fun one!
Soon enough the pork tenderloin was ready to be placed on the grill. We cooked them on the BBQ on medium heat for 4 minutes a side and they came out beautifully!
Each of use took a bread wrap, filled it with basmati rice, lettuce, carrots and cucumbers and drizzled the BBQ sauce mixture on top.
This meal is delicious and healthy! We all agreed we’ll be having it again soon…..and that’s saying something when all four of us agrees.
