As most of you know I’ve committed to eating as healthy as possible this year. This means that I have eliminated most sweets and baked goods which has my family ready to revolt.

My daughters have been missing having some baked treats and well Pinterest has this habit of inspiring me and I finally gave in after seeing a photo of some easy to make Peanut Butter Brownie cookies.

My girls were recruited of course, this is such a simple recipe that my eldest became the Master Chef and was allowed to order us around the kitchen.

Begin by filling your brownie pan (or cupcake pan) half full with pre-made cookie mix. Or go on and make your own from scratch if you’d prefer.

Next place a peanut butter cup in the center of each square. You can choose to use full size peanut butter cups or perhaps a cookie if you wish.

Next whip up your favorite brownie recipe and pour over each square until it’s 3/4 full.
