Pesto Stuffed Chicken Breast Recipe

So many of us are looking for simple, delicious yet healthy meals to serve our families and are often finding that recipes are complicated or lengthy. Here is my super-simple Pesto Stuffed Chicken Breast recipe which you’ll find takes very little time and honestly is divine.

Stuffed Chicken Breast Recipe

Begin by pouring your drink of choice, then begin by de-boning and slicing a chicken breast in half to make a fillet.

At this point I flattened the breast and brushed on a generous layer of pesto and made a little pile of red pepper slices and a blend of romano, parmesan and asiago cheeses in the middle of the breast.

Carefully roll the breast around the pile, this is messy but do your best to keep the ingredients in the center.

Next wrap your chicken breast in pieces of prosciutto until the whole breast is covered and skewer to hold it together.

Place on your BBQ at medium heat and cook for 4 minutes.

 Flip and repeat three more times, for a total of 20 minutes on the BBQ.

Slice the stuffed chicken breast and serve! Yes it’s really that simple!

    I really like your recipe, it looks chic. I should try it when my kids come for Sunday Dinner. Do you think I could use goat cheese also?

      It’s one of those recipes which looks and tastes impressive but is very simple. Those are the recipes I enjoy the most. You could easily use goat cheese, I often use flavored goat cheese and different types of peppers. I loved meeting you this weekend Helene!

    Whooohoooo, this is a recipe I can try and impress a special someone ;) . I am no chef, but it looks very simple enough, that even this wanna-be cook can try it. I’ll let you know how it turns out, if I’m successful….lol
