If you’re on the hunt for a delicious, easy chicken recipe this Bacon-Wrapped Chicken stuffed with roasted red pepper cream cheese is a great choice. It’s full of flavour and is oh-so-pretty on the plate!
Our family eats chicken multiple times a week and I’m always searching out new recipes or ideas. One of my stand-by recipes is Pesto Stuffed Chicken Breast but apparently I’ve been making it too often because the kids were beginning to rebel. I had pulled out 2 chicken breasts and was determined to use them so I scoured the pantry and fridge and came up with the recipe below.
Thankfully I had cream cheese in the fridge so I used 2 oz of it softened and added 1/4 cup of ground Roasted Red Pepper flakes and finally chopped up 1 very large garlic clove and mixed them well.
Now take 6 large pieces of bacon and place them in a pan on medium heat to pre-cook until they’re half done.
The next step isn’t as pleasant, simply because I am really grossed out by touching raw meat. I took the 2 chicken breasts, filleted them off the bone and pounded them flat to about 1/4 of an inch thick. Once you’re happy with the thickness, spread 1/2 of your cream cheese mixture on each breast. Top with a sprinkling of parmesan and Asiago cheeses.
By now your bacon should be cooked, it should be limp and not yet crispy. If you are someone who loves your bacon super-crispy you may choose to pre-cook your bacon a bit longer. Place your bacon onto paper towel and pat off excess grease.
Once again you’re going to have to touch the raw chicken (am I the only person who cringes for this?).
Wrap your chicken breasts into rolls, tuck in the ends and secure with a skewer lengthwise down the middle. Next you’ll take your pieces of bacon and wrap around the chicken rolls and secure with toothpicks (or pieces of skewers if you don’t have toothpicks).
Place on a baking sheet and cook in an oven pre-heated to 375 degrees for 30-35 minutes or until the chicken is fully cooked.
Remove all of the skewers/toothpicks, slice and serve!

- 2 – 3 oz cream cheese (depending on size of chicken breast)
- Roasted Red Pepper Flakes – crushed
- 1 very large garlic clove (or 2 regular sized)
- 6 slices of bacon (more if you prefer more coverage)
- toothpicks and skewers
Preparation:
- Combine 2 tablespoons of softened cream cheese with 1/4 cup of ground Roasted Red Pepper flakes and chopped garlic
- Place bacon into pan on medium heat to pre-cook until half done
- Flatten chicken breasts to about 1/4 of an inch thick and spread 1/2 cream cheese mixture on each breast. Top with a sprinkling of parmesan and Asiago cheeses.
- Remove half-cooked bacon from pan and use paper towel to remove excess grease

This is a delicious recipe – not quite easy, but worth the effort. I am not grossed out by raw chicken, but I make sure to have a separate cutting board that I can clean very well afterwards.
I would love to make this with lettuce wraps. Cause, you know, lettuce makes bacon a salad :D We LOVE bacon here
