Summer Chicken Burgers Recipe & Giveaway #BreakUpWithGroundBeef

Nothing says Summer quite like Chicken Burgers on the grill! Today I’m bringing a very special recipe, not only because it’s delicious but because I’m going head to head with Stacey from ThisLilPiglet who is also developing a Chicken Burger recipe.

Here’s the deal, Stacey and I are using the Nacho Chicken Burger from Maple Leaf Prime as our inspiration to develop our own burger and go head to head. We are both sharing our recipes today, showing how diverse ground chicken can be!

There are some ingredients which simply SCREAM Summer to me; feta cheese, sun-dried tomato, corn…oh my goodness yes please!

Summer Chicken Burgers

Ingredients:

  • 2 large Cloves garlic, minced
  • ½ cup sun-dried tomato, minced
  • 1 tsp cayenne pepper
  • Salt & pepper, to taste
  • 2 lb (2 packages) Maple Leaf Prime Naturally® Extra Lean Ground Chicken
  • ½ cup onion & garlic croutons, as breadcrumbs
  • 2 Eggs
  • 1/2 cup crumbled Feta cheese
  • 8 hamburger buns, split
  • Mixed greens (Arugula, lettuce)
  • Salsa (recipe below)
  • Guacamole (recipe below)

Preparation:

Begin by mincing the sun-dried tomatoes and garlic. I decided to do all of my preparation on the deck by the pool and used my KitchenAid hand blender which is my new love!

Place the Maple Leaf Prime ground chicken into a bowl with 2 eggs, the sun-dried tomato/garlic, cayenne pepper, salt, pepper and ground onion & garlic croutons (grind with hand blender).

Now it’s time to take off your rings and get your hands into the bowl. Kneed the ingredients until they are well blended and the mixture sticks together. The more you work it the more moisture will be removed from the chicken so be gentle.

Once you are satisfied with the consistency, use your hands or a burger press to form into 8 burgers.

Place your burger patties on a grill which is preheated at medium heat.

Cook for 4 minutes a side, flipping twice on each side or internal temperature has reached a minimum of 165˚F (74˚C). Then top with selected cheese and allow it to melt to your taste.

Serve on your favorite bun and top with my homemade Salsa and Guacamole!

Salsa Recipe

Salsa Ingredients:

  • 1/2 onion
  • 2 cloves garlic
  • 1/2 red pepper
  • 1/2 orange pepper
  • 1 cup canned tomatoes, drained
  • 1/2 cup corn
  • 1 tablespoon lime juice
  • Tabasco to taste
  • 1 teaspoon chili powder
  • 1 tsp crushed chillies

Preparation:

  • Avocado the onion, garlic and peppers into a blender and mince.
  • Add in tomatoes and blend again.
  • Transfer mixture into a bowl and adding remaining ingredients and combine.

Guacamole Recipe

Ingredients:

  • 1 avocado
  • 1 cup sour cream
  • 1 tablespoon lemon juice
  • 2 garlic cloves, minced

Preparation:

Mince avocado and garlic in a blender until smooth then combine with remaining ingredients.

    I don’t really have a favourite topping for my burgers. I usually have a basic burger. However I am able to eat more variety of foods now I am thinking that blue cheese would make a great topping.

    The Feta cheese in the recipe intrigued me most. I absolutely love feta cheese but would have never have thought to add it to the burger recipe. I bet it is great!
