Here in Ontario the weather is lovely and rhubarb is in season so of course I simply had to purchase this fresh produce when I came upon it at the local farmers market. I will be sharing a few recipes I enjoyed developing with rhubarb today, for now I hope you enjoy my Strawberry Rhubarb Lemonade recipe.
Strawberry Rhubarb Lemonade
Serves 2
Ingredients:
- 1 – 1/4 cups water
- 1 – 1/2 cups chopped rhubarb
- 1 – 1/2 cups chopped strawberries
- 1/4 cup sugar
- 1 teaspoon lemon zest
- 1 sprig fresh mint
- 1/3 cup freshly squeezed lemon juice
- 3/4 cup sparkling water
Preparation:
In a saucepan, stir together the first 6 ingredients. Bring the mixture to a boil, stirring until the sugar is dissolved.

Reduce heat, cover and simmer for 15 minutes. Allow the rhubarb mixture to cool, then strain it through a wire-mesh strainer set over a large pitcher. Press on the solids to extract as much liquid as possible, then discard the solids leftover.

Add the lemon juice and sparkling water, stir and pour into glasses over ice. Garnish as desired.
