This week has been a challenging one to say the least and frankly today I found a wee bit of happiness in my favorite drink recipe Apple Pomegranate Soda. We came home from our little trailer in Muskoka to find that Creeping Charlie had officially decimated the backyard grass area. This stuff spreads like wild-fire and there’s no simple way of getting rid of it!
We refused to live with this vine creeping throughout the rest of the yard so we sucked it up and started digging it all out (and any remaining grass). This is heavy work for my husband and I putter away, breaking the good soil away from the roots and stashing it all into garden bags.
As you can see I turned to a fan and a stool for this job, honestly it’s been a heatwave here! As we drove to the garden centre to order the new sod the car thermometer screamed that it was 42 degrees Celsius outside…WHAT?
Today we’ve turned all the earth and removed almost all of the roots/weed system just in time for the topsoil and sod deliveries tomorrow. WHEW talk about cutting it close.
To celebrate I decided to make my favourite drink recipe, a gorgeous Apple Pomegranate Soda and of course I have to share the recipe with you all. The flavours are amazing, so worth making to cool off on a hot day!
Apple Pomegranate Soda – My FAV Drink Recipe
Ingredients:
- 1 cup apple juice
- 1 cup pomegranate juice
- 1 cup water
- 1/4 cup sugar
- Sparkling water or seltzer
Preparation:
Place the apple juice, pomegranate juice, water and sugar into a pot and bring to a boil. Reduce heat and simmer for approximately 1 hour or until you have 1 cup remaining.
Place in the fridge to cool. Once cooled, fill glasses with ice and place 3-4 tablespoons in each glass. Top with sparkling water or seltzer, stir and serve.
