Last month I shared two recipes which use rhubarb, my Strawberry Rhubarb Lemonade and my Berry Rhubarb Parfait. Both of these are lovely recipes and today I’m continuing the theme with my Berry Rhubarb Cheesecake recipe. This recipe uses some of the same ingredients from my Berry Rhubarb Parfait, you simply later the cheesecake layer with the berry, rhubarb mixture to create a lovely dessert.
Berry Rhubarb Cheesecake Recipe
Ingredients:
- 1 (8 ounce) package cream cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream, whipped
- 2 cups Graham Cracker Crumbs
- 6 Tbsp. margarine, melted
Berry Rhubarb Mixture
- 2 tablespoons butter
- 1 teaspoon vanilla
- 2 teaspoons honey
- 3 stalks of rhubarb, peeled if needed and sliced thinly
- 1 cup fresh blackberries
- 1 cup fresh strawberries
Preparation:
Berry Rhubarb Mixture
Melt butter with honey and vanilla in a pan over medium heat. Once melted, add in your chopped rhubarb and allow to simmer for approximately 10 minutes.
Now add in the berries and simmer for 5 minutes so the berries become soft and release their juice. Once it reaches the desired texture, set aside to cool.
As the mixture simmers, you can prepare your cheesecake and graham mixtures. MIX graham crumbs and margarine and press a portion into the bottom of each cup.
Beat together the cream cheese, sugar, and vanilla until the mixture is smooth and spreadable. Whisk whipped cream into cream cheese mixture until smooth.
Place the cream cheese and berry/rhubarb mixtures in the fridge until cooled.
Layer each mixture into cups as you desire and serve.
