Layered Tropical Smoothie

Lately our family is on a smoothie kick! It’s such a delicious, nutritious choice and oh-so simple to make. On a hot Summer’s day there’s nothing like tossing some fruit, a liquid and ice into the blender and enjoying the cool smoothie.

This week we decided to go tropical with our smoothie, we grabbed some coconut milk, coconut extract, kiwis, strawberries and a frozen banana and voila! The Layered Tropical Kiwi Strawberry Smoothie was born.

Kiwi Strawberry Smoothie

Ingredients:

  • 1 cup of strawberries
  • 1/4 cup water
  • 1/2 cup ice
  • 3 kiwis (one to slice for garnish)
  • 1 frozen banana
  • 1-1/2 cup Coconut Milk
  • 1/4 cup coconut extract
  • 2 teaspoon sugar
  • 1 cup ice

Preparation:

Begin by preparing the strawberry layer. Wash and hull your strawberries, cut in half and place into blender with 1 tsp sugar, water and 1/2 cup of ice. Blend until it reaches the consistency you desire. If you prefer to remove the seeds, omit the ice and strain the blended mixture using a sieve. Then return to the blender and blend with ice.

Now pour a small amount into each glass and set aside.

Smoothie mix

Rinse the blender and place the banana, 2 peeled kiwis, coconut milk, coconut extract, 1 tsp sugar and ice into it. Blend until it reaches the consistency you enjoy.

Using a spoon, carefully pour the white layer onto the strawberry layer. If you pour into the middle it will push up the strawberry layer, creating a neat “bleed” effect which is a cool visual.

Garnish with a kiwi slice and serve.

    That looks delicious! I love using coconut milk in smoothies! I might have to stop at the store and pick up some kiwis since that’s the only ingredient I’m missing.

    Step 1 preparation says to put sugar into the blender with strawberries and ice, but you don’t list the amount of sugar to use. Is it the same as in step 2 (1 teaspoon)?
