The weather outside is glorious and I’m determined to enjoy it while I can, as a Canadian I am aware that snow is always on it’s way….it’s a matter of time. So in the spirit of Summer I’ve developed a gorgeous Pomegranate Mojoito cocktail. I’ll happily share this drink recipe with you all, and if you’re intimidated by Pomegranate don’t be; I’ve outlined a bit about this fruit in my recent blog post What Is A Pomegranate.
Mojitos are one of my favourite drinks, they are naturally tart because of the lime but the pomegranate lends a delicious sweetness to this one.
Pomegranate Mojito Mocktail Drink Recipe
Ingredients:
- 1 sprig of mint
- 1 teaspoon simple syrup (equal parts boiling water and sugar, cool before using)
- lime wedge (add in a lemon wedge if you’d like)
- 2 ounces pomegranate juice
- 4 ounces sparkling water
Preparation
- Muddle the quartered lime, sugar and mint leaves (if you prefer to, remove the lime skin first)
- Place ice cubes in a high ball glass, add mixture and pour in pomegranate juice
- Top with sparkling water and stir
- Garnish with a mint leaf and serve

This looks so simple but really really interesting, and a nice spin on the Virgin Mojito. That’s something I really appreciate about mocktails – people seem to get really creative and innovative!
