EASY Ham and Egg Cups

If you’ve come around SoberJulie.com before you’ll know I’m a sucker for EASY recipes. I’m always on the hunt for delicious, simple recipes my family will actually eat. This is a challenge because there are 6 of us here, each with different tastes but I’m no wimp when it comes to a challenge. One ingredient we all seem to agree upon is eggs but when you’re cooking 2 eggs each for 6 people it can become a challenge. This is why I have taken to making my eggs in a muffin tin. I call it my EASY Ham and Egg cups and honestly it’s so simple, you just have to try it!

Ingredients:

  • 8 Eggs
  • 8 Slices of ham
  • Pam spray or butter
  • Muffin tin

Preparation:

Begin by preheating your oven to 350 degrees and grease a muffin tin with butter or spray. Now you fold the ham slices in half and place them into the muffin tin, fanning them around the cup.

Crack an egg into the fanned ham in each egg cup. Don’t worry at all if the egg white goes outside of the ham, it’s all good.

Slide the muffin tray into the preheated oven for approximately 20 minutes. Remove the muffin tin and allow to sit for a moment before you scoop them out. Allowing them to sit makes it easy, they won’t stick.

That’s it, you can pull out a gorgeous plate and serve. This is my Great-Grandmother’s plate which is making it’s debut here so of course I’m going to share more than one image.

    That would be a great quick & easy eggs benny! Place on toasted english muffin & top with hollandaisse & away you go.
