‘Twas the week before Christmas, I opened the fridge
No treats to be had, not even a smidge.
The stockings were hung, the lights full of glares
But what would we do without any squares?
So I called the 3 bakers, their eyes were aglow
“We know how to fix this” they giggled, “We KNOW!”
So I pulled out the bowls and the spoons and the butter
And suddenly their three little hearts were a flutter.
Syd grabbed the eggs and Chelsea, the mixers
Charley got the chocolate, they were little fixers
Butter and cream cheese and don’t forget flour
And all their hard work took less than an hour
The oven timer buzzed and we let out a cheer,
Cause the three little bakers saved Christmas this year.
With butter and sugar, Christmas spirit remains
with their cheesecake squares topped with crushed candy canes.
Candy Cane Cheesecake Squares
INGREDIENTS
- 1 ½ cups of chocolate cookie crumbs
- ¼ cup butter, melted
- 2 pkgs of cream cheese, softened
- ½ cup sugar
- ½ tsp vanilla
- 2 eggs
- Crushed candy canes (optional)
PREPARATION
Preheat oven to 350F. Mix crumbs with the butter and press firmly onto bottom of an 8 or 9 inch baking pan. Beat cream cheese, sugar and vanilla with an electric mixer on medium speed until well blended. Add eggs, mix until just blended. Pour mixture over the crust. Bake 40 minutes or until center is almost set. Cool. Refrigerate at least 3 hours before cutting into bars. Crush Candy Canes and sprinkle on top of squares (if desired)
