Healthy Pizza Casserole Recipe – Comfort Food Alert

During these cold Winter months there is nothing I love more than a good, comfort-food style casserole. Finding a good casserole recipe is like striking gold! Finding one that’s quick to make, delicious and healthy in a way that doesn’t make the kids noses turn up can be quite a challenge. Apparently they “don’t like” anything that resembles good for them which makes my life a bit tricky at times. This Healthy Pizza Casserole recipe is one that my kids have given the thumbs up, the more I chop the veggies the more they want! If you have a child who avoids veggies, you could puree up all of these veggies and simply add them into the sauce.

Healthy Pizza Casserole Recipe

(Serves 6)

Healthy Pizza Casserole Recipe

INGREDIENTS:

  • 1 lb lean ground beef
  • 1 jar of your favourite low calorie pasta sauce (this measurement is based on Compliments Balance Six Vegetable Pasta Sauce – 75 calories/half cup)
  • 3 large garlic cloves, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 cup of chopped mushrooms
  • 1/2 red onion, chopped
  • 1 cup chopped spinach
  • Cooking Spray
  • 10 oz refrigerated pizza crust dough (found in the produce section of the grocery store)
  • 3/4 cup shredded reduced fat mozzarella

PREPARATION:

  1. Preheat the oven to 425
  2. Brown ground beef in a large nonstick skillet over medium-high heat. Stir while cooking until the beef crumbles then drain excess oil.
  3. Add the mushrooms, onion and garlic into the skillet and cook while stirring for 3 minutes.
  4. Pour in the pasta sauce and remaining vegetables, cook until heated.
  5. While that is heating, coat a 9×13 baking dish with cooking spray. (use 6 individual dishes if you’d like)
  6. Roll out the pizza crust dough and press into the bottom of your baking dish, bring this halfway up the sides.
  7. Sprinkle half of the cheese over the bottom of the crust.
  8. Pour the meat mixture into the dough and bake uncovered for 13 minutesPull out of the over and top with your remaining cheese, return to the oven for approx 5 minutes. This dish is done when the crust is browned and the cheese is melted.

    Tried this last night…everyone loved it and I have some picky eaters to feed! Served it with a salad and it was enough to feed two adults, two kids, have it again as a snack later, and lunch today. Considering the same idea only with ground chicken, and Hawaiian toppings! So many options!
