Candy Bar Cookies

If there is anything I have a weakness for it’s cookies. I can avoid them as much as I want but in the ends I’ll always reach for a delicious cookie. They bring back childhood memories of time in the kitchen with my Mum, flour haphazardly strewn on the floor and our laughter….

These Candy Bar Cookies are simply delicious. They are simple and I’m sure your kids will love making them with you!

Candy Bar Cookies

INGREDIENTS

  • 1 cup butter, softened
  • 3/4 cup brown sugar
  • ½ cup white sugar
  • 1 egg
  • 2 tsp vanilla extract
  • ¼ cup light corn syrup
  • 2½ cups flour
  • ¼ tsp salt
  • 1 tsp baking soda
  • 1 cup of your favourite candy bar, chopped into chunks

PREPARATION

  1. Preheat oven to 350°F. Grease two baking sheets and set aside for later.
  2. In a large bowl, mix the butter, brown sugar and sugar with an electric mixer on low speed until combined.
  3. Add in corn syrup, egg and vanilla and mix on medium speed until mixture is combined together.
  4. In another bowl, add the flour, baking soda and salt and stir together.
  5. Add dry mixture to wet mixture and beat on low speed until blended together.
  6. Add in chopped candy bar and mix together with a spoon.
  7. Drop by rounded tablespoons onto a greased baking sheet. Bake for 15 minutes or until golden brown.
  8. Cool cookies on a wire rack. Makes about 3 dozen cookies.

    I have some candy bars leftover from Halloween, thinking I may have to use some up in these cookies and add them to the Christmas cookie trays I am making up!
