I have a deep love of carbs, meaning I adore them. There is nothing like a delicious pasta recipe to make my heart sing…ok it could be an issue but honestly when I read a menu with Pasta Carbonara my heart sings and my choice is made immediately.
Pasta Carbonara is an age old recipe which all breakfast lovers can appreciate, certainly this girl can. After years of growing up with my British Mum making bacon and egg fry-ups, it’s like there a deep-seeded need for it. Again, could be an issue but I digress.
Pasta Carbonara with Bacon and Garlic
INGREDIENTS
- Fresh Pasta – to serve 4
- 8 pieces of bacon
- 4 green onions, sliced
- 1/2 medium onion, diced
- 1 cup cherry tomatoes, halved
- 2 large cloves garlic, minced
- 3 whole eggs
- 3/4 cup finely grated parmesan
- 1/2 cup coarsely grated parmesan
- 3/4 cup heavy cream
PREPARATION
Begin by choosing whatever kind of fresh pasta you enjoy, if you’re looking to make homemade pasta click that link to see my recipe which won’t have you pulling your hair out and is oh-so delicious.
Cook your pasta, while it is cooking fry the bacon until it is just this side of crispy. Remove the bacon from the pan and pat it dry with paper towel. Drain the bacon grease from the pan but don’t wipe it out, you want that lovely grease to make your sauce.
Place the minced garlic and diced onion into the pan on medium heat and brown it as the lovely smell surrounds you.
In another bowl whisk the eggs, finely grated parmesan, pepper and cream until it’s well combined.
Drain your cooked pasta but keep aside some of the water in case you need it to add to your sauce. Place the drained pasta into the hot pan and slowly pour in the egg mixture, stirring constantly. When you’ve poured in half of the egg mixture, add in the bacon, green onion and tomatoes and continue stirring and adding the egg mixture.
The heat of the pan and the pasta will begin to cook the sauce and the stirring will prevent the eggs from becoming scrambled. If you need to, add in some pasta water to help with the sauce consistency.
Pour into bowls, top with coarsely grated parmesan and enjoy!
