When I was a girl, coming home from school during the Winter was a COLD walk. We ran into the house as quick as we could and immediately headed for the kitchen to scavenge for food. Call us ritualistic but each afternoon we’d be found there messing up my Mum’s cupboards and counters while on the hunt.
When all else failed we’d grab a can of tomato soup, knowing that it took few minutes and was easy to prepare. These days my own children are repeating the past. Minutes after arriving home from school, MY kitchen is now a mess and I kick myself each time I miss the window of preparing something.
Today I made a Roasted Tomato Soup which filled the house with a gorgeous aroma of tomatoes, garlic and onion. When the girls smelled it, they were convinced to give it a try…”even though it’s a vegetable”. They adore it as much as I do and so of course I have to share.
Roasted Tomato Soup
INGREDIENTS
- 5 large ripe tomatoes
- 1/2 medium yellow onion
- 6 garlic cloves
- 1 tbsp olive oil
- 1/4 cup chopped parsley, plus more for garnish
- 1 1/2 cups vegetable broth
- 2 tbsp tomato paste
PREPARATION
Begin by preheating your oven to 350 degrees F. Now pull out a roasting pan and line with foil. I do this simply to help with clean up, peeling back the foil and tossing it away saves some scrubbing.
Cut the tomatoes into wedges, dice the onions, chop the parsley and peel the garlic. Once that is complete, lay all of them onto the roasting pan, drizzle with olive oil and toss by hand to ensure everything is covered.
Roast for approximately a half an hour then remove and set aside.
Now get out a pot, place onto stove on medium heat and pour the vegetable soup into it. Add in the tomato paste and stir until combined. Bring to a boil and add in the roasted ingredients.
Reduce to a simmer for approximately 10 minutes then turn off the heat. Using an immersion blender or transfer to a blender, puree the soup until it is the consistency you enjoy.
This Roasted Tomato Soup is the perfect answer if it’s a chilly day or anytime you’re looking for a healthy, delicious choice for a snack or appetizer.
