I LOVE PASTA….like truly LOVE pasta! I sometimes think I must have been born in Italy in my previous life! Pasta is delicious in any form and for a busy family like ours, it is a staple that we turn to when life gets too fast-paced and we need to save some time without compromising our family dinners.

In my Paleo life, pasta is really the one thing that I have had a hard time eliminating. But why eliminate when I have found a delicious, healthy and easy alternative?

This recipe is almost-perfectly-Paleo. The reason I say almost, is because I use a bit of Gay Lea Spreadable Butter to give the squash a bit of moisture and some of that delicious buttery flavour. I don’t worry about this because Gay Lea Spreadable Butter is free of preservatives and it’s a source of Omega 3!

INGREDIENTS

  • 1 spaghetti squash (cut in half lengthwise with the seeds scooped out)
  • 2 tbsp Gay Lea Spreadable Butter
  • Fresh ground pepper to taste

Sauce:

  • 1 tbsp olive oil
  • 3-4 cloves of garlic minced
  • 3 tomatoes diced
  • ½ green pepper chopped
  • ½ yellow, orange or red pepper chopped
  • 1 jalapeño pepper finely chopped (seeds removed)
  • 4-5 mushrooms chopped (I love baby bellas)
  • ½ onion chopped (I love to use green onions finely chopped)
  • Fresh basil

PREPARATION

Begin by preheating your oven to 375. Use ½ of the Gay Lea Spreadable Butter on each half – spread easily with a knife to cover the top of the squash and then sprinkle with pepper to taste.
Place spaghetti squash halves on a baking sheet and bake for approx 40-45 minutes. Once finished, let cool while you make your sauce.

For the sauce, heat a pan on the stove at medium heat. Add olive oil, garlic and onions and let cook for a couple of minutes.  Add in all of the peppers and allow to cook until they begin to tenderize.
Add in the tomatoes, mushrooms and basil and let simmer until the mushrooms are tender.

Once your sauce is complete, take a fork and pull the squash out of its shell in strands and plate.
Simply add the sauce over top and serve hot!

Each spaghetti squash makes about 2 good sized servings. It is a delicious and healthy alternative to pasta and if you are in a rush for dinner, the sauce only takes a few minutes to whip up and the squash can be made the night before and heated up.

And as an added bonus, it makes for great leftovers!  Add your favorite vegetables into the sauce too for a change of flavours! Enjoy!
