It’s Friday which means that I share a recipe which I’ve come up with by following a prompt from my fellow foodie bloggers in the #FridayRecipeClub. This week the theme was burgers which had me pretty excited.
Burgers just go well with the Spring weather we’ve been having in Southern Ontario, but I had to do some experimenting because I am following a Paleo lifestyle (read about Paleo Basics here) and can’t turn to breadcrumbs as a filler.
I am quite pleased with my Oh-So Simple Paleo Chicken Burger recipe, it is full of flavour and still meets my healthy threshold.
Oh-So Simple Paleo Chicken Burger
Serves 4, 194 Calories, 22 grams of Protein
INGREDIENTS
- 1 lb lean ground chicken
- 1 egg
- 3 cloves of garlic, minced
- 1 tsp cayenne pepper
- Salt & pepper to taste
- 1/2 onion, diced
- 1/2 cup mushrooms, diced
- 1/4 cup cherry tomatoes
- Baby Spinach
PREPARATION
Place the all ingredients into a bowl and combine well. The best way to do this is by using your hands and kneading it together. The more you work it the more moisture will be removed from the chicken so be gentle.
Once you are satisfied with the consistency, use your hands or a burger press to form into 4 burgers.
Place your burger patties on a grill which is preheated at medium heat.
Cook for 4 minutes a side, flipping twice on each side or internal temperature has reached a minimum of 165˚F (74˚C).
Serve on a bed of baby spinach and top with my homemade Salsa and Guacamole, the recipes are below.
Salsa Recipe
Salsa Ingredients:
- 1/2 onion
- 2 cloves garlic
- 1/2 red pepper
- 1/2 orange pepper
- 1 cup canned tomatoes, drained
- 1/2 cup corn
- 1 tablespoon lime juice
- Tabasco to taste
- 1 teaspoon chili powder
- 1 tsp crushed chillies
Preparation:
- Place the onion, garlic and peppers into a blender and mince.
- Add in tomatoes and blend again.
- Transfer mixture into a bowl, add in remaining ingredients and combine.
Guacamole Recipe
Guacamole Ingredients:
- 1 avocado
- 1 firm tomato, finely diced
- 2 tablespoon lemon juice
- 4 garlic cloves, minced
Preparation:
Mince avocado, tomato and garlic in a blender until smooth then combine with remaining ingredients.
