The Ultimate Potato Soup Recipe

Nothing feels like a hug quite like a bowl of hot potato soup! Growing up with an English/Irish Mum potatoes were a staple in our home and she was very creative in how she used them. Nothing was off-limits when it came to a potato soup recipe in our house. I’ve carried on this tradition, my family adores when I take the time to whip up a GREAT soup and honestly they’re quite quick to do.

Depending on the day, I go from a very basic potato soup to my Cream of Potato Bacon Soup (the kids favourite!).

Those are pretty standard in many homes but today please allow me to introduce you to the ULTIMATE potato soup! This baby is jammed with good stuff, beware of the YUM factor which will have you coming back for more. This soup is perfect if you’re hosting guests for dinner on a cold evening, serve up small portions to warm them up as they come through the door.

The key to this soup, aside from all of the lovely cheese and bacon is the sour cream! It makes the soup so creamy it’s divine.

Ultimate Potato Soup Recipe

(Serves 10)

INGREDIENTS

  • 1 pound bacon strips, diced
  • 1 large onion, chopped
  • 1 cup sliced carrots
  • 3 tablespoons all-purpose flour
  • 3 cups milk
  • 1-1/2 cups water
  • 2-1/2 cups cubed potatoes
  • 1 can whole kernel corn, drained
  • 2 chicken bouillon squares (2 teaspoons)
  • 3 cups shredded cheddar cheese
  • 2 cups cubed fully cooked ham
  • 1 cup of sour creamUltimate cream of potato soup recipe

 

PREPARATION

  • Cook the bacon over medium heat until crisp in a Dutch oven or soup pan. Once crisp, remove and place onto paper towel to drain.
  • Saute onions and carrots in the bacon drippings until tender, then stir in the flour.
  • Add in milk and water and bring to a boil.
  • Add in bouillon and combine well.
  • Add in potatoes and corn, reduce heat and simmer uncovered until potatoes are cooked.
  • Finally add in the cheese, ham, bacon and sour cream. Stir well and simmer over low heat until the cheese is melted.
  • Serve in bowls and top with grated cheese as garnish.ultimate potato soup recipe wm

Instructions

    There is only 3 words to describe this dish and that would be OMG!! this recipe is 100% better than the recipe I have been using now for a couple years, thanks for sharing this delicious dish with us, I now have an excellent potato soup to serve!!

    It’s funny. This is one of those recipes that as a kid I would have HATED. But as an adult I love potato soup. It’s my favourite of all soups. That and french onion. There is something just so soothing about this comfort soup.
