Today I’ve been getting into the Christmas spirit! Boney M’s “Mary’s Boy Child”, Justin Bieber’s “Drummer Boy” and other festive tunes were playing all day as I worked happily in the kitchen. I was baking away, surrounded by shortbread when my girls came squealing in with rosy red cheeks begging to taste the delicious whipped shortbread cookies I’d just finished. Thankfully I managed to keep a few from this batch to get photos, the last batch mysteriously went missing.
This is a VERY simple recipe which ALWAYS turns out just right! Make sure you’re using high quality unsalted butter and don’t rush the whipping process, it really matters. Finding the perfect recipe to make shortbread cookies was a challenge which makes me even more happy to share this one with you!
Whipped Shortbread Cookie Recipe
INGREDIENTS:
- 1 cup of room temperature unsalted butter
- ½ cup of confectioners’ sugar
- ¼ cup of cornstarch
- 1 ½ cups of all purpose white flour
PREPARATION:
Place 1 cup of room temperature unsalted butter in your mixer. Turn your mixer on high for 10-15 minutes. Your butter will be perfectly creamed and will be white rather than yellow. That’s how you know the timing is right. (While the butter is mixing, preheat your oven to 375 degrees F).
Once the butter is creamed, add in ½ cup of confectioners’ sugar and ¼ cup of cornstarch. Allow that all to mix together for a minute or two before adding in 1 ½ cups of all purpose white flour. Mix on low for one minute and then on high for 3-4 minutes.
Roll 1″ dough balls into a ball in your hands and place onto a cookie sheet about an inch apart. Press down gently with a fork to create lines if you wish, I like the way it ends up looking. If you want people to think you are really fancy, use a piping bag with the biggest star tip to pipe them into swirls or use a small ice cream scoop to get perfect balls of dough.
Bake for 10 minutes or until golden, then remove and allow to cool. Once cool, top with your choice of sprinkles or perhaps some melted chocolate…YUM!

Fabulous. Made em today for Christmas. Ended up making a second batch…double it up. You will need to — these will fly off the cookie plate.
This recipe is amazing! The cookies just melt in your mouth. I added a 1/4 teaspoon of vanilla for more flavour; my family absolutely loved them.
I made these cookies tonight. I have no idea how you’d be able to roll them out with your hands- the batter is SUPER sticky, and impossible to roll. However, I put them into an icing bag and piped them onto the cookie sheets. I only baked them for 6 minutes, and they were done perfectly, beautiful, clean edging on the rosettes. Very tasty- will definitely make them again!
I have used this recipe 4 times now and – thank you!!!!!! I could never make shortbread that didn,t weigh a ton. These cookies are light and tasty and beautiful to behold. This is my go to recipe to impress LOL
Does the cornstarch help them stay high like the pictures? I tried one from Allrecipes.com that did not contain cornstarch and they melted on the pan and didn’t bake well. Edges browned and when I tried to eat one it absolutely fell apart and the middle was almost raw! I hate “losing” good ingredients! 😔 maybe it is all the whipping process of yours that succeeds. Not like that with the recipe I used.
