Every now and again I have the pleasure of tasting something that makes my toes curl. It’s always a treat when it happens and while I’d like to recreate every dish in my kitchen, unfortunately that rarely happens. Somehow even when I follow the recipe things still don’t turn out quite the same. Today I spent time in my kitchen trying to recreate Carnival Cruise Line’s Warm Chocolate Melting Cake and the results were STUNNING! By that I mean a toe-curling bonanza.
This recipe is bang on, it’s straight-forward and the end result is delicious. I am proud to have received it from Chef Panda on Carnival Cruise Line’s Liberty Ship when I had the chance to attend his Chef’s Table experience and he gave permission for me to share it! I’ll be writing all about that experience later this week but suffice it to say it’s probably one of my favourite dinners I’ve ever had. Meanwhile I leave you with this delicious dessert recipe which I am making again tonight for our dinner guests…because 2 in one day is just fine right?
Carnival Cruise Line’s FAMOUS Warm Chocolate Melting Cake Recipe
INGREDIENTS
- 6oz Dark Chocolate
- 6oz Butter
- 4 Eggs – room temperature
- 6oz Sugar
- 2oz Flour
PREPARATION
Begin by melting the chocolate and butter in a saucepan on the stove over low heat.
Mix the eggs and sugar by whisking in a bowl for a few minutes, once well blended add the flour into the egg and sugar mixture.
Next add the egg mix to the melted chocolate and mix well.
Pour the mix into a greased mould of your choice. I filled ramekins 3/4 full and that worked well.
Bake directly in the oven at 390 degrees Fahrenheit for 14 minutes, remove from heat and garnish with powdered sugar and grated dark chocolate. Serve with some ice cream as well!!
It may not look like much right there…but just wait until you get your spoon in there!!

My oven goes in 5 min increments so I would have to do 385 or 395. Which would be better and add or subtract any minutes in the timeing? Thank you for sharing this delicious looking recipe…
I had the chocolate melting cake on the second night of our cruise. It was so good I had it every night after that.
If you have cake all the way through and no hot fudge center, you cooked it too long.
I had this every night on my Bahamas cruise 6 years ago and have been dreaming of it ever since! I made this recipe yesterday and it’s just as incredible as I remember it on the ship! THANK YOU for this perfect recipe! My one question though…the taste is perfect, but is there anything I can to to prevent it from falling/collapsing after it comes out of the oven?? I’d love to serve this to guests but it doesn’t look as impressive after it sinks 😕

This was just ok… I didn’t meet my expectations, didn’t taste like the cake on the ship ); what chocolate did you use? Mine was more milk chocolate than rich dark chocolate, and I used dark chocolate chips!
Try the bar, not the chips. Dark or bittersweet…
