    to go with a beautifully roasted turkey in this double roaster.
    My favourite side dish recipe is Mashed Potato Medley.
    Ingredients
    1 box (900 mL) CAMPBELL’S® Ready to Use 30% Less Sodium Chicken Broth
    3 cups (750 mL) 1″ (2.5 cm) pieces of peeled Yukon Gold potatoes
    2 cups (500 mL) 1” (2.5 cm) pieces of peeled sweet potatoes
    2 cups (500 mL) 1″ (2.5 cm) pieces of unpeeled red-skinned potatoes
    1/2 cup (125 mL) light sour cream
    2 tbsp (30 mL) butter or margarine
    Generous dash of ground black pepper
    Directions
    1. Heat broth and potatoes to a boil over medium-high heat in 3 qt (3 L) saucepan.
    2. Reduce heat to medium. Cover and cook for 10 minutes or until potatoes are tender. Drain, reserving broth.
    3. Mash potatoes with 1/4 cup (60 mL) broth, sour cream, butter and black pepper. Add additional broth, if needed, until desired consistency.

    I make my mashed potatoes with butter, chicken stock, sour cream, a touch of 10% cream, and a bit of salt and pepper- YUM! Not low calorie, but they taste good!

    Our favourite side dish recipe to go with roasted turkey is Scalloped Peas and Onions – even if you don’t really like peas . . . you’ll like them this way!

    Scalloped Peas and Onions

    Serves 6. Recipe can be doubled for a larger crowd.

    Preheat oven to 350˚ F

    Butter a shallow baking dish and set aside.

    Ingredients:

    2 TBSP butter
    2 Cups onion, sliced
    1 10 oz. Can Cream of Celery Soup
    ¼ Cup milk
    ¼ TSP salt
    ⅛ TSP pepper
    ¼ TSP dried savory
    12 oz bag frozen peas

    Topping:

    1 TBSP butter, melted
    ½ Cup bread crumbs

    Directions:

    Heat 2 TBSP butter in a saucepan.
    Add onion, cooking gently, stirring 5 minutes or until onion is limp.
    Add soup, milk, salt, pepper, savory and heat through.

    Spread ½ of the frozen peas in the baking dish.
    Pour ½ of the soup mixture over the peas.
    Repeat with the remaining peas and soup mixture.

    Melt 1 TBSP butter and add bread crumbs; spread over the top.

    Bake, uncovered, for 30 minutes. Sauce will bubble through the topping when ready.

    I make roasted veggies. Potatoes (preferably baby or creamer potatoes), sweet potatoes, parsnips, carrots, turnip, garlic, onion, and celery and I toss them in some Italian Dressing and roast them until tender.
