We have had to make a rule in this house that no hands shall touch any baked goods until Mummy says “GO”. It’s like I live with a bunch of starving dessert-lovers or something…if I turn my back on any kind of dessert, it’s simply GONE and I lose the chance to grab my finished product photos. It’s a common struggle for food bloggers and I’ve put my foot down after losing an entire batch of these EASYÂ Sugar Cookies last week. That’s 60 cookies!!!! Who the heck can go through 60 sugar cookies in less than 2 hours? My family apparently!
I suppose I have to blame the sugar cookies…no way could my family be a bunch of heathens like this; the cookies are at fault. With their golden goodness who could resist them anyway? They’re delicious, easy to make and freezeable! So I forgave my family and whipped up another batch instead of holding a grudge. However…if it happens again, I’ll have to place the blame where it may actually belong.
EASYÂ Sugar Cookies
INGREDIENTS
- 3 cups all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup butter (softened)
- 1-1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
PREPARATION
- Combine flour, baking powder and salt in a large bowl
- In another large bowl, mix butter and sugar on medium speed until well blended. Once blended, increase the speed on mixer and beat until light and fluffy (approx 5mins)
- Reduce mixer speed to low then beat in the eggs and vanilla until well mixed then add in flour and mix until blended.
- Divide the dough into 4 equal portions, flatten each into a disk and wrap in plastic wrap and pop into the fridge overnight.
- Preheat oven to 350 degrees F. Using one flattened disk of dough, spread flour onto your work surface and roll the dough out to slightly less than a 1/4″ thick.
- Using cookie cutters, cut dough into the shapes you desire.
- Place cookies onto a parchment-lined cookie sheet and put into the oven to bake for 12 to 15 mintues or until the edges are just turning golden brown.
- Store in an airtight container between layers of parchment paper – freeze if you’d like!
