Somehow the new year seems to go hand in hand with being more mindful of our eating habits. It’s no secret that I adore food…but I need my knuckles wrapped because my 1st choice is rarely one that’s nutritious. That’s saying it very nicely. Given a choice the last thing I’d reach for is a vegetable, especially if there’s bread, cheese or meat around. So this finds me feeling very bloated and gross right about now. Feeling like this is not something I can bear so my husband and I are focused on detoxing our bodies and one of the recipes which is our GO-TO when we do this is a Detox Cabbage Soup.

This is a simple way to jam in some veggies in a quick bowl of soup which also happens to be delicious. This is also low calorie which means I eat it all day long which keeps me feeling fuller longer and yet speeds up my digestion in a very good way.

As I mentioned, once I’ve made a batch I keep this soup in the fridge and have it daily as a snack or a side with meals. Assuming you serve it into 8 portions it is only 71Ā calories so go ahead, have a bowl or two and get those veggies in!

INGREDIENTS

  • 1/2 head of cabbage, chopped into approx 1″ pieces
  • 1 mediumĀ onion, roughly chopped
  • 1 cupĀ carrots, sliced
  • 1 cup green beans, cut into 1″ pieces
  • 1 cup mushrooms, sliced
  • 2 cups of baby spinach, chopped
  • 3 cloves of garlic, diced
  • 1 small can tomato paste (156ml)
  • 1 can of diced tomatoes (796ml or 3.3 cups)
  • 4 cups ofĀ chicken broth (950ml )
  • Salt and pepper to taste

PREPARATION

  1. Begin by chopping your veggies and heat the oil on medium/high heat in a large pot.
  2. Saute your onions, mushrooms and garlic until they are tender
  3. Add in all of your ingredients except the baby spinach.
  4. Allow the soup to come to a light boil, then lower the heat.
  5. Add in the baby spinach and simmer until the cabbage and carrots reach the tenderness you like, approx 20 mins.

    This sounds great :) It talks about peppers in the #2 for prep? I am guessing that is an option to add bell peppers?

    Tasty soup! I omitted the spinach and used a can of Italian Spiced tomatoes.
    FYI – Instructions say “Add the peppers” but no peppers are listed in the ingredients.

    An absolute favorite in my family and truly because it’s so tasty and satisfying. I kind of think of this as cleaning out my frig but with really good stuff. I’ll modify the veggies based on what I have on hand. I love feeding this to my family.
