BBQ Maple Chicken and Caramelized Onions

Recently I’ve been taking a look at my recipes here and realized that I’ve been sadly remiss in the area of main dishes. Almost every night we are scratch-cooking our dinners and while my intent was to share our everyday recipes with you all, life has gotten in the way and the hectic family household hasn’t allowed for photos. No more I say! Last week Brad and I took a bit of time to get shots of dinners and today I’m sharing Brad’s favourite BBQ Maple Chicken and Maple Caramelized Onion recipe with you all.

Brad has a soft spot for maple syrup…we are Canadian and surrounded by glorious maple syrup at this time of year so he’s a happy guy!

BBQ Maple Chicken

Maple chicken with caramelized onions recipe

INGREDIENTS

  • 8 chicken thighs
  • 1 tablespoon garlic
  • 1 tablespoon chilli powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup maple syrup

PREPARATION

  • Preheat your BBQ grill to medium-high (about 350°F to 450°F)
  • Combine the garlic, chilli powder, cumin, salt and pepper.
  • Sprinkle the spices over the chicken, give it a rub.

  • Place the chicken on the BBQ(skin-side down if using skin-on), and cover for approximately 5 minutes until grill marks appear. Flip the chicken over, cover  and cook for another 5 mins.
  • Flip the chicken over and baste with maple syrup. Cover and cook another 5 mins. Repeat this process until the temperature of the chicken reaches 165°F using a thermometer.

Maple Caramelized Onions

INGREDIENTS

  • 2 tablespoons butter
  • 4 cups onion, sliced
  • 2 tablespoons maple syrup
  • Salt and pepper to taste
  • 1/2 cup water

PREPARATION

  1. In a medium saucepan over medium-high heat, melt butter.
  2. Add the sliced onion, 2 tablespoons of maple syrup and season with salt and pepper, to taste.
  3. Saute until deep golden brown, about 2 minutes. Add in water, 1 tablespoon at a time, if the pan becomes dry
  4. Serve the chicken on the plate and top with the maple caramelized onions.
