Summer is upon us and one of the flavours that screams warm weather to me is key lime. Just thinking about it has my tongue dancing…the tartness of the lime along with the sweetness is delightful. Today I’m sharing a spin on a key lime pie…I’ve made it into a Key Lime Pie Cake!
Because let’s get real friends…sometimes when you’re looking for a dessert you just want cake. This combines the best of a key lime pie with a light and airy cake. I call that success!
Key Lime Pie Cake

INGREDIENTS
- 1 Cup butter
- 1 ½ Cups sugar
- 4 Eggs
- 3 Cups flour
- 1 Cup milk
- â…› Cup lime juice
- 2 Tsp baking powder
For the Frosting
- 1 Âľ Cups powdered sugar
- ½ Cup butter
- 2 Tsp vanilla extract
For the Topping
- 2 Sliced limes
PREPARATION
- Preheat the oven to 350 degrees F.
- In a mixer, cream the butter and sugar.
- Add the eggs, flour, milk, lime juice, and baking powder. Mix for 3-5 minutes until the batter has no lumps.
- Grease a cake pan and pour the cake batter into it.
- Bake for 45 minutes in the oven or until done.
- While it’s baking, place the powdered sugar, butter and vanilla extract in a bowl and mix for 3 minutes or until fluffy.
- Remove the cake from the oven, and wait  5-10 minutes before removing it from the cake pan.
- Let it cool down for 15 minutes.
- Top it with the frosting and the sliced limes.
- Serve and enjoy.
Tip:Â Top with pineapple and mango for a more tropical result.

This looks like a wonderful cake. I love a good “solid” cake just plain, and with lime added. Perfection.
