Cherry Protein Breakfast Pops

I hope you have heartily kicked off your summer, where ever you may be!  We’ve been spending a lot of family time near our favourite beaches and pools.  It’s not hard to see why this season is the favourite for many.

EASY Cherry Protein Breakfast Popsicles

One of the things we enjoy most during the hot days are homemade popsicles.  Making your own couldn’t be any simpler and it gives me a comfort to know exactly what I’m putting in them.  I’ve been making these Protein Breakfast Popsicles regularly because…really, do we need a reason?  All kidding aside, sometimes the kids aren’t interested in eating in the morning and I think I’ve discovered a way to get them to at least put something in their belly.  Not only is this a pretty cool way to start the day (popsicles for breakfast??), but these are blended up with a full scoop of protein and made with good for your gut kefir.

Kefir, a fermented milk product much like yogurt, is a serious source of good proteins and yeast.  It’s a probiotic that is essential for a healthy digestive system.  Mixed into smoothies or even eaten in a bowl, kefir tastes similar to a tangy regular yogurt.  Here, I’ve blended it with some farm fresh sweet cherries and an extra scoop of vanilla protein powder for an extra boost of protein.  Just for some added texture, I dropped in a tablespoon or so of granola just before I popped these into the freezer.

Breakfast popsicles are incredibly versatile.  If you start with a healthy base, you can add whatever fruit is seasonally available and customize them to your liking.

Cherry Protein Breakfast Popsicles

*Before starting, it’s a good idea to fill an individual popsicle cavity with water to measure how much liquid it holds.  Then you can adjust the recipe accordingly.  This recipe yields 6 popsicles.

INGREDIENTS

  • 1 1/2 cups plain kefir
  • 1 scoop vanilla protein powder
  • 1 1/2 cups pitted sweet cherries, divided
  • 1 cup honey oat granola, or granola of choice

PREPARATION

1.  In a blender, combine the kefir, protein powder, and 1 cup of the sweet cherries.  Blend until smooth.

2.  Fill each popsicle cavity, leaving about an inch of space at the top.  Divide the granola into each popsicle cavity.  Cut the remaining cherries in half and divide among the popsicle cavities. 

3.  Top each cavity up with any remaining liquid.  Add the stick top/cover and freeze for 4-6 hours or overnight.  Enjoy!
