Healthy Chicken Chilli

If you’ve stopped by for a recipe, I’m SO glad to have you! Today I’m sharing my Healthy Chicken Chilli recipe which will is a great staple for anyone doing Keto, Paleo, Whole 30 or any kind of clean, healthy eating regime.

This is a flavourful dish that is super easy to throw together. When you’re focused on eating well, finding healthy chicken recipes that stand up…well it’s super important because there’s nothing like a HANGRY Julie when they flop!

I personally try to have some in the freezer at all times so that I can have it as a snack or lunch when I’m in a pinch. This is a keeper recipe for anyone looking to keep sugars low getting in their veggies. Add in the fact that it’s delicious and it’s a win-win.

Healthy Chicken Chilli

INGREDIENTS

  • 1 lb (450g) ground chicken (or turkey if you’d prefer)
  • 1 cup Asparagus – chopped
  • 1 Red pepper – chopped
  • 1 Green pepper – chipped
  • 1 medium onion – diced
  • 1 cup Mushrooms – sliced
  • 2 cups Cauliflower – chopped finely
  • 1/4 cup water
  • 3 cloves garlic – minced
  • Salt and Pepper to taste – I use ½ teaspoon
  • 1 can Low sugar tomato sauce (Mine is 24oz/680ml)

PREPARATION

  1. Begin by browning the chicken in a pan on medium heat.
  2. Add in asparagus, green and red peppers, onion and mushroom and sautee for 3-5 mins.
  3. Season with salt and pepper to taste.
  4. Chop cauliflower into small pieces and put into microwavable dish.
  5. Add in 1/4 cup of water to cauliflower and cook on high in microwave for 2 minutes to soften a bit (should be a bit firm).
  6. Drain water from cauliflower.
  7. Add softened cauliflower to the chicken/veggie mixture in the pan and cover with tomato sauce.
  8. Stir in the sauce and cauliflower until entire mixture is evenly blended.
  9. Lower heat to low, cover and allow to simmer for 5-8 minutes.

That’s it, totally simple and a great staple to have in the fridge. I make this in large batches and store in the freezer.

    This is definitely a good way to enjoy chicken. It is so flavorful and the chili will definitely blow you away. Best paired with white rice. Now, I am hungry again. Haha!
