Serves: 10
  • 1 pound bacon strips, diced
  • 1 large onion, chopped
  • 1 cup sliced carrots
  • 3 tablespoons all-purpose flour
  • 3 cups milk
  • 1-1/2 cups water
  • 2-1/2 cups cubed potatoes
  • 1 can whole kernel corn, drained
  • 2 chicken bouillon squares (2 teaspoons)
  • 3 cups shredded cheddar cheese
  • 2 cups cubed fully cooked ham
  • 1 cup of Gay Lea sour cream
  1. Cook the bacon over medium heat until crisp in a Dutch oven or soup pan. Once crisp, remove and place onto paper towel to drain.
  2. Saute onions and carrots in the bacon drippings until tender, then stir in the flour.
  3. Add in milk and water and bring to a boil.
  4. Add in bouillon and combine well.
  5. Add in potatoes and corn, reduce heat and simmer uncovered until potatoes are cooked.
  6. Finally add in the cheese, ham, bacon and sour cream. Stir well and simmer over low heat until the cheese is melted.
  7. Serve in bowls and top with grated cheese as garnish.
