Maple Chicken and Caramelized Onions

Serves: 8 thighs
Ingredients
  • MAPLE CHICKEN
  • 8 chicken thighs
  • 1 tablespoon garlic
  • 1 tablespoon chilli powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ cup maple syrup
  • CARAMELIZED ONIONS
  • 2 tablespoons butter
  • 4 cups onion, sliced
  • 2 tablespoons maple syrup
  • Salt and pepper to taste
  • ½ cup water
Instructions
  1. MAPLE CHICKEN
  2. Preheat your BBQ grill to medium-high (about 350°F to 450°F)
  3. Combine the garlic, chilli powder, cumin, salt and pepper.
  4. Sprinkle the spices over the chicken, give it a rub.
  5. Place the chicken on the BBQ(skin-side down if using skin-on), and cover for approximately 5 minutes until grill marks appear. Flip the chicken over, cover and cook for another 5 mins.
  6. Flip the chicken over and baste with maple syrup. Cover and cook another 5 mins. Repeat this process until the temperature of the chicken reaches 165°F using a thermometer.
  7. CARAMELIZED ONIONS
  8. In a medium saucepan over medium-high heat, melt butter.
  9. Add the sliced onion, 2 tablespoons of maple syrup and season with salt and pepper, to taste.
  10. Saute until deep golden brown, about 2 minutes. Add in water, 1 tablespoon at a time, if the pan becomes dry
  11. Serve the chicken on the plate and top with the maple caramelized onions.
