Chicken Chilli

Ingredients
  • 1 lb ground chicken (or turkey if you’d prefer)
  • 1 cup Asparagus – chopped
  • 1 Red pepper – chopped
  • 1 Green pepper – chipped
  • 1 medium onion – diced
  • 1 cup Mushrooms – sliced
  • 2 cups Cauliflower – chopped finely
  • ¼ cup water
  • 3 cloves garlic – minced
  • Salt and Pepper to taste - I use ½ teaspoon
  • Low sugar tomato sauce
Instructions
  1. Begin by browning the chicken, then add in asparagus, green and red peppers, onion and mushroom.
  2. Season with salt and pepper to taste.
  3. Chop cauliflower into small pieces and put into microwavable dish.
  4. Add in ¼ cup of water and cook on high in microwave for 2 minutes to soften a bit (should be a bit firm).
  5. Drain water from cauliflower.
  6. Add softened cauliflower to the chicken/veggie mixture in the pan and cover with tomato sauce.
  7. Stir in the sauce and cauliflower until entire mixture is evenly blended.
  8. Lower heat to low, cover and allow to simmer for 5-8 minutes.
