Grilled Garlic Lemon Chicken Recipe
  • 4 chicken legs
  • 4 chicken thighs
  • ¼ c lemon juice
  • 3 tbsp oil (or butter)
  • 2 tsp garlic, minced (healthy teaspoons!)
  • 1 tsp thyme
  • as desired salt and pepper
  1. Cut off any excess fat from the chicken. Season with salt and pepper.
  2. In a large ziplock bag, combine all ingredients and let marinade at least 4 – 5 hours.
  3. Preheat the grill to medium, or 350
  4. Begin to grill the chicken, watching for flare ups and burning
  5. A good tip for cooking the chicken is to have a cooler area of the grill. So reduce the heat on a burner (or move coals), and place the chicken in the cooler side of the grill and close the lid when cooking. This will help prevent major flare ups and burning. Cook for approximately 35 minutes for the thighs and 30 minutes for the legs. Check the internal temperature often and, again, watching for flare ups and turning the chicken often.
  6. Chicken is done when you reach an internal temp of 180 and the juices are running clear.
  7. Remove from the grill and let sit for 5 minutes before serving.
