Easy Chicken Recipe - Bacon Wrapped Roasted Red Pepper Stuffed Chicken

An Easy Chicken Recipe which uses bacon and a roasted red pepper cream cheese filling

Serves: 4
  • 2 chicken breasts - bone and skin removed
  • 2 - 3 oz cream cheese (depending on size of chicken breast)
  • Roasted Red Pepper Flakes - crushed
  • 1 very large garlic clove (or 2 regular sized)
  • 6 slices of bacon (more if you prefer more coverage)
  • toothpicks and skewers
  1. Combine 2 tablespoons of softened cream cheese with ¼ cup of ground Roasted Red Pepper flakes and chopped garlic
  2. Place bacon into pan on medium heat to pre-cook until half done
  3. Flatten chicken breasts to about ¼ of an inch thick and spread ½ cream cheese mixture on each breast. Top with a sprinkling of parmesan and Asiago cheeses.
  4. Remove half-cooked bacon from pan and use paper towel to remove excess grease
  5. Wrap chicken breasts into rolls, tuck in the ends and secure with a skewer lengthwise down the middle.
  6. Wrap bacon around the chicken rolls and secure with toothpicks (or pieces of skewers if you don't have toothpicks).
  7. Place on a baking sheet and cook in an oven pre-heated to 375 degrees for 30-35 minutes or until the chicken is fully cooked.
  8. Remove all of the skewers/toothpicks, slice and serve!
