Candy Cane Cheesecake Squares

A lovely cheesecake square for Christmas
Recipe type: dessert
  • 1 ½ cups of chocolate cookie crumbs
  • ¼ cup butter, melted
  • 2 pkgs of cream cheese, softened
  • ½ cup sugar
  • ½ tsp vanilla
  • 2 eggs
  • Crushed candy canes (optional)
  1. Preheat oven to 350F.
  2. Mix crumbs with the butter and press firmly onto bottom of an 8 or 9 inch baking pan.
  3. Beat cream cheese, sugar and vanilla with an electric mixer on medium speed until well blended.
  4. Add eggs, mix until just blended.
  5. Pour mixture over the crust.
  6. Bake 40 minutes or until center is almost set.
  7. Cool.
  8. Refrigerate at least 3 hours before cutting into bars.
  9. Crush Candy Canes and sprinkle on top of squares (if desired)
