Candy Cane Cheesecake Squares

- 1 ½ cups of chocolate cookie crumbs
- ¼ cup butter, melted
- 2 pkgs of cream cheese, softened
- ½ cup sugar
- ½ tsp vanilla
- 2 eggs
- Crushed candy canes (optional)
- Preheat oven to 350F.
- Mix crumbs with the butter and press firmly onto bottom of an 8 or 9 inch baking pan.
- Beat cream cheese, sugar and vanilla with an electric mixer on medium speed until well blended.
- Add eggs, mix until just blended.
- Pour mixture over the crust.
- Bake 40 minutes or until center is almost set.
- Cool.
- Refrigerate at least 3 hours before cutting into bars.
- Crush Candy Canes and sprinkle on top of squares (if desired)
