A simple, healthy cabbage soup recipe

  • ½ head of cabbage, chopped into 1" pieces
  • ½ red onion, roughly chopped
  • 1 green pepper, roughly chopped
  • 1 red pepper, roughly chopped
  • 2 large carrots, sliced into coins
  • 2 cups of baby spinach, chopped
  • 2 large stalks of celery, sliced
  • 3 cloves of garlic
  • 1 small can tomato paste (156ml)
  • 1 can of diced tomatoes (796ml or 3.3 cups)
  • 1 box of chicken broth (950ml or 4 cups)
  • Salt and pepper to taste
  1. Begin by chopping your veggies and heat the oil on medium/high heat in a large pot.
  2. Saute your onions and garlic until they are tender and add the peppers in for approx 3 minutes.
  3. Add in all of your ingredients except the baby spinach and celery.
  4. Allow the soup to come to a light boil, then lower the heat.
  5. Add in the baby spinach and celery and simmer until the cabbage and carrots reach the tenderness you like, approx 20 mins.
