Coconut Easter Nests
Recipe type: Dessert
  • 1 package of milk chocolate chips (about 1 ½ cups)
  • 1 ½ to 2 cups sweetened shredded coconut
  • Peeps, Easter eggs, candies of your choice
  1. In a medium sized saucepan on the stove, melt the chocolate chips on low heat, stirring often.
  2. As soon as they are completely melted, remove from heat.
  3. Stir in the coconut. You’ll want it to be somewhat thick and that the chocolate completely covers the coconut mixture.
  4. Lay out a piece of wax paper or parchment paper on a counter top. Drop heaping tablespoonfuls onto the paper. With a spoon, make a small well in the center of each dropping to create your “nest”.
  5. Add Peeps, Candy Easter Eggs, jelly beans or whatever you like into the center of each of your nests. Let sit for at least an hour to allow the chocolate to harden. Makes about 6 to 8 nests.
