Spectacular Spaghetti Squash #GayLeaFoods
  • 1 spaghetti squash (cut in half lengthwise with the seeds scooped out)
  • 2 tbsp Gay Lea spreadable butter
  • Fresh ground pepper to taste
  • Sauce:
  • 1 tbsp olive oil
  • 3-4 cloves of garlic minced
  • 3 tomatoes diced
  • ½ green pepper chopped
  • ½ yellow, orange or red pepper chopped
  • 1 jalapeño pepper finely chopped (seeds removed)
  • 4-5 mushrooms chopped (I love baby bellas)
  • ½ onion chopped (I love to use green onions finely chopped)
  • Fresh basil
  1. Preheat your oven to 375
  2. Use ½ of the Gay-Lea spreadable butter on each half - spread easily with a knife to cover the top of the squash and then sprinkle with pepper to taste
  3. Place spaghetti squash halves on a baking sheet and bake for approx 40-45 minutes
  4. Once finished, let cool while you make your sauce
  5. For the sauce, heat a pan on the stove at medium heat.
  6. Add olive oil, garlic and onions and let cook for a couple of minutes. Add in all of the peppers and allow to cook until they begin to tenderize.
  7. Add in the tomatoes, mushrooms and basil and let simmer until the mushrooms are tender.
  8. Once your sauce is complete, take a fork and pull the squash out of its shell in strands and plate.
  9. Simply add the sauce over top and serve hot!
