Nanny Hudson's Meatloaf with Hard Boiled Eggs

Serves: 6
  • 1 lb of ground beef
  • 1 jar of Gourmet Nanny Hudson's Homestyle Ketchup (set aside 2 tablespoons for topping)
  • 1 egg
  • 1 cup breadcrumbs or crushed croutons
  • 1 onion - diced
  • 2 hard boiled eggs, peeled and cooled to room temperature
  • salt & pepper to taste
  • 1 tablespoon dried roasted red pepper flakes
  1. Preheat your oven to 350 degrees F and spray a 5x9 loaf pan with cooking spray or lightly grease with butter.
  2. In a bowl combine beef, Gourmet Nanny Hudson's Homestyle Ketchup, egg, breadcrumbs/crushed croutons, onion and salt and pepper.
  3. Once those ingredients are combined, take ⅓ of the mixture and place as the bottom later in the loaf pan. Pat the mixture smooth and level, then use your spoon to make an oblong indent and place the 2 eggs into them.
  4. Use the remaining mixture to cover the eggs, be sure that you have the eggs entirely covered.
  5. Place into the over for approximately 45 minutes, then remove from the oven and spread the remaining 2 tablespoons of Gourmet Nanny Hudson's Homestyle Ketchup on the top. I also added some roasted red pepper flakes on top for some added flavour.
  6. Turn your oven to broil and place the loaf pan back into the oven for 5 minutes. Allow to sit for 5 minutes, then slice and serve.
